Crushed, light crispy pork rind, not scratchings

Instructions
Crush the pork rinds.
In a bowl, mix all ingredients except the egg and chicken to make your crust mix
Break the egg into a separate bowl, whisk it lightly.
Take chicken fillets, coat in egg and then coat in crust mix, make sure chicken is properly covered.
Put butter in a large skillet over a high heat.
Take coated chicken and fry on the skillet until cooked through.
Serve.
