BBQ Instant Pot Ribs

Ingredients

  • 1.5 kg Pork Ribs Short or spare
  • 250 ml Lager
  • 150 ml Apple Cider Vinegar

Rub

  • 2 tablespoons Smoked Paprika
  • 1 tablespoon Cumin
  • 3 tablespoons Brown sugar
  • 1/2 teaspoon onion salt
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Ground Black Pepper
  • 1 teaspoon Salt

BBQ Sauce

  • 250 ml Balsamic vinegar
  • 250 ml Ketchup
  • 125 ml Apple Cider Vinegar
  • 125 ml Honey
  • 2 tablespoons Whole Grain Mustard
  • 1 tablespoon Molasses
  • 3 teaspoons Worcestershire sauce
  • 1 1/2 teaspoons Hot sauce
  • 1/2 teaspoon salt

Instructions

  • In a bowl, mix paprika, cumin, brown sugar, garlic powder, onion salt, salt and pepper for your rub.
  • Remove any excess pieces of meat from the edges of your ribs and then remove the membrane from the back with a paper towel.
  • Sprinkle your rub over the ribs, pat & rub it in, make sure they're covered well.
  • Cut the racks in half, so they fit your Instant Pot.
  • Place trivet in bottom of Instant Pot and add your cooking liquids (Lager & apple cider vinegar)
  • Pressure cook on high pressure, 25-30 mins, natural release
  • While cooking, preheat your oven to 200C and mix ingredients for BBQ sauce (Just a quick recipe, you can replace with BBQ sauce of your choice if preferred)
  • Once pressure has dropped, carefully open the lid and move ribs to a baking tray, brush with as much BBQ sauce as you want, all sides, even bones
  • Oven bake 10-15 mins or until the BBQ sauce is sticky and to your liking
  • Remove from the oven and serve
