Dissolve xanthan gum in 2 tsp olive oil, set aside.
Steam broccoli until crisp-tender, set aside.
Season steak with salt and pepper.
Heat 1/4 cup olive in a large skillet over medium-high heat until pan is hot.
Cook beef until brown, ~2 mins per side, set aside.
Saute garlic until fragrant ~1-2 mins.
Add garlic paste, soy sauce, brown sugar, sesame oil, red pepper flakes and xanthan gum mixture, stir until sauce starts to thicken.
Remove pan from heat
Add beef (With juices), broccoli, scallions and sesame seeds.
Stir until combined.
Serve.
