Ingredients

  • 750 g Beef Diced
  • 2 tbsp Madras spice mix/paste See notes at the bottom
  • 200 ml Water
  • 1/2 Onion Medium ~50g total
  • 200 g Roma Chopped Tomatoes (Half can) Lowest carb I could find, 6g per 100g
  • 1/2 tsp Ground Ginger
  • 1/2 tsp Garlic
  • 2 tbsp Oil
  • 100 ml Koko Coconut Milk Optional

Instructions

  • In a medium sauce pan, heat up your oil.
  • Dice your onion and add to the pan, cook until soft.
  • Add your spice mix/paste, garlic, ginger & 1/4 of your water to deglaze.
  • Mix well and allow to thicken.
  • Add in your beef, cook until sealed.
  • Add remaining water, bring to the boil and then cover. 
  • Leave simmering gently for ~30 mins until the meat is tender.
  • Mix in chopped tomatoes and simmer with the lid off for 15 mins.
  • Serve with sides of your choice

Optional

  • Allow to stand and cool, generally gets better if left until the following day. Then when ready to eat, warm through and add a bit (~100ml) of coconut milk to thin the sauce a little (Try Koko as it's fairly low in carbs).

Notes

I used Patak's Madras Paste as the blend is pretty decent and comes in at 5g carbs for 2 tbsp (~66g). Or make your own spice blend, both of these should do the trick though carbs may be higher:
