Chicken with Cabbage & Blue cheese

Ingredients

  • 500 g Green cabbage
  • 50 g Blue cheese
  • 50 g Parmesan
  • 125 g Mascarpone
  • 1 tsp Garlic powder
  • 1 tsp Pink salt
  • 1 tsp Black pepper Ground
  • 1 tsp Olive oil
  • 300 g Boneless chicken thighs

Instructions

  • Cut chicken thighs into cubes/strips,
  • Season with pepper and garlic powder.
  • Add olive oil & leave to marinate for 20 minutes.
  • Cut cabbage into strips and add to a pan of boiling water, allow to simmer until starting to soften.
  • In a hot skillet, sear off the chicken until starting to brown. Add salt and remove from pan (Leave the oil behind!)
  • Drain cabbage and move to the skillet, add a lid and allow to cook for 5-10 mins. Check it often so it doesn't burn (Little bit of browning is ok).
  • Add your cheeses to the pan and allow to cook for 5-10 mins. If sauce is too thick, add ~75ml of water.
  • Season with salt & pepper to taste.
  • Return chicken to pan & serve. Top with a bit more parmesan if you want.
