Cut chicken thighs into cubes/strips,
Season with pepper and garlic powder.
Add olive oil & leave to marinate for 20 minutes.
Cut cabbage into strips and add to a pan of boiling water, allow to simmer until starting to soften.
In a hot skillet, sear off the chicken until starting to brown. Add salt and remove from pan (Leave the oil behind!)
Drain cabbage and move to the skillet, add a lid and allow to cook for 5-10 mins. Check it often so it doesn't burn (Little bit of browning is ok).
Add your cheeses to the pan and allow to cook for 5-10 mins. If sauce is too thick, add ~75ml of water.
Season with salt & pepper to taste.
Return chicken to pan & serve. Top with a bit more parmesan if you want.
