Crackin' Burgers
Servings 6 Servings
Ingredients
- 12 Cream Crackers
- 8 sprigs Flat-leaf Parsley
- 500 g Minced Beef
- 2 tablespoons Dijon mustard Heaped, but optional
- 1 large Egg
- 2 teaspoons Salt
- 2 teaspoons Cracked Black Pepper
- 1 tablespoon Smoked Paprika Optional
- Olive oil
- 6 Brioche Burger Buns Or buns of your choice
Garnish (Optional)
- 6 slices Cheddar cheese Medium - Mature
- 1 Round Lettuce Shredded
- 3 Tomatoes Sliced thin
- 1 Red Onion Sliced thin
- Gherkins Sliced thin
- Tomato relish
- Mustard
Instructions
Prepare
- In a large bowl, break up crackers until fine (Can do in a bag/tea towel if preferred)
- Chop parsley finely, add to bowl along with mustard, beef & egg
- Mix it all together by hand
- Divide into 6, mold into burger patties (~2cm thick), place on a tray/plate
- Drizzle with oil, cover and put in fridge to firm up (Or freezer if short on time)
- Wash your veggies & slice as desired
Cook
- Preheat large griddle or frying pan on a high heat until hot, drop to medium heat
- Place burgers into pan, use spatula to press down lightly
- Cook on each side, 3-4 mins each (Adjust time to preference)
- When burgers are nearly done, add a slice of cheddar and allow to melt
Serve
- Wipe pan over with kitchen paper, half your burger buns and lightly toast in the pan
- Place burger onto bottom bun, garnish onto top & serve

Exceptional. I thought the cream crackers madness at first, but I was very wrong. Tasty and simple enough for cooks with limited ability such as myself 🙂
Will make again for BBQ season.
