Parmesan & Lemon Crusted Chicken

Ingredients

  • 500 g Chicken Fillets
  • 1 tsp Salt
  • 1 tsp Ground Pepper
  • 75 g Parmigiano Reggiano Grated
  • 50 g Pork Crunch Crushed, light crispy pork rind, not scratchings
  • 1 tbsp Parsley
  • 1/2 tsp Garlic powder
  • 1/2 tsp Lemon zest
  • 1 Egg Large
  • 2 tbsp Butter For cooking

Instructions

  • Crush the pork rinds.
  • In a bowl, mix all ingredients except the egg and chicken to make your crust mix
  • Break the egg into a separate bowl, whisk it lightly.
  • Take chicken fillets, coat in egg and then coat in crust mix, make sure chicken is properly covered.
  • Put butter in a large skillet over a high heat.
  • Take coated chicken and fry on the skillet until cooked through.
  • Serve.
