Parmesan & Lemon Crusted Chicken

Ingredients
- 500 g Chicken Fillets
- 1 tsp Salt
- 1 tsp Ground Pepper
- 75 g Parmigiano Reggiano Grated
- 50 g Pork Crunch Crushed, light crispy pork rind, not scratchings
- 1 tbsp Parsley
- 1/2 tsp Garlic powder
- 1/2 tsp Lemon zest
- 1 Egg Large
- 2 tbsp Butter For cooking
Instructions
- Crush the pork rinds.
- In a bowl, mix all ingredients except the egg and chicken to make your crust mix
- Break the egg into a separate bowl, whisk it lightly.
- Take chicken fillets, coat in egg and then coat in crust mix, make sure chicken is properly covered.
- Put butter in a large skillet over a high heat.
- Take coated chicken and fry on the skillet until cooked through.
- Serve.
