Chicken with Cabbage & Blue cheese

Ingredients
- 500 g Green cabbage
- 50 g Blue cheese
- 50 g Parmesan
- 125 g Mascarpone
- 1 tsp Garlic powder
- 1 tsp Pink salt
- 1 tsp Black pepper Ground
- 1 tsp Olive oil
- 300 g Boneless chicken thighs
Instructions
- Cut chicken thighs into cubes/strips,
- Season with pepper and garlic powder.
- Add olive oil & leave to marinate for 20 minutes.
- Cut cabbage into strips and add to a pan of boiling water, allow to simmer until starting to soften.
- In a hot skillet, sear off the chicken until starting to brown. Add salt and remove from pan (Leave the oil behind!)
- Drain cabbage and move to the skillet, add a lid and allow to cook for 5-10 mins. Check it often so it doesn't burn (Little bit of browning is ok).
- Add your cheeses to the pan and allow to cook for 5-10 mins. If sauce is too thick, add ~75ml of water.
- Season with salt & pepper to taste.
- Return chicken to pan & serve. Top with a bit more parmesan if you want.
