Fast BBQ Brisket

Ingredients
- 2 kg Beef brisket Trimmed and quartered
- 3 tablespoons Worcestershire sauce
- 1 1/2 tablespoon Smoked Paprika
- 1 tablespoon Dijon mustard
- 2 teaspoon Chili powder
- 5 tablespoons Olive oil
- 2 teaspoons Salt
- 1 medium Yellow Onion Diced
- 6 cloves garlic Sliced
- 330 ml Lager
- 3 tablespoons Apple Cider Vinegar
- 350 ml BBQ Sauce
- 100 ml Brown Sugar
- Brioche Burger Buns
Instructions
Marinade
- Throw brisket in a large bowl with Worcestershire sauce, paprika, mustard, chili & 2 tablespoons of oil. Marinate for 30 mins at room temp
- Salt the brisket
Saute
- Preheat pressure cooker on saute (More), add remaining oil
- Brown the beef (Might have to do in batches) and set aside, careful here as the marinade can burn very easily
- Throw in onion & garlic, saute until soft
Pressure cook
- Return the beef to the pressure cooker
- Add lager, BBQ sauce, apple cider vinegar & brown sugar
- Cook on high pressure, 90 mins, 10 min natural release
Finshing up
- Move beef to a baking tray, slice once it's cool enough
- Set pressure cooker to Saute (Normal) and add beef back to the juices
- Simmer for 15-20 mins
- Serve on burger buns
